Wholesale bakery mixers — high-capacity planetary and spiral for industrial production
Wholesale and route bakeries, commissaries, frozen-dough plants and large pizza chains operate in a different gear from retail bakeries. The Dirmak high-capacity tier — IBT planetary 200–317 quarts and ISM spiral 200–370 quarts — is built specifically for that scale. Factory-direct from İzmir to wholesale operations across the Americas.
What "wholesale-tier" means in mixer specification
Wholesale and commissary mixing has different requirements than retail. Cycle counts are higher, run hours per shift are longer, sanitation is stricter, batch consistency is non-negotiable, and the machine has to handle the abuse of multiple operators across multiple shifts without going off-spec. The high-capacity Dirmak tier — IBT 200, IBT 300-DC CR, ISM 200, ISM 250, ISM 350 — is designed for that profile.
Drive train, gearbox, motor and bearings on these models are sized for continuous-duty operation. Controls are IP54-rated, sealed against flour dust and washdown overspray. Bowl, tools, scraper, lid and any food-contact surface are AISI 304 stainless; the -CR full-stainless variant extends AISI 304 to the body and column for plants with strict sanitation.
The high-capacity lineup
- IBT 200 — 211 qt planetary; 240 lb cake or 120 lb bread per cycle; 15 HP motor; 7" or 12" touch. Mid-wholesale planetary workhorse.
- IBT 300-DC CR — 317 qt twin-tool planetary; 400 lb cake or 200 lb bread per cycle; 20+1 HP; 12" touch with recipe automation; jacketed bowl; CIP self-cleaning. Plant-scale flagship. See IBT 300-DC CR detail.
- ISM 200 — 211 qt spiral; ~280 lb bread dough per cycle; two-speed motor; -32S reversing-bowl option standard. Mid-wholesale spiral workhorse.
- ISM 250 — 265 qt spiral; ~330 lb bread dough per cycle. The capacity wholesale chains and large pizza commissaries pick most often.
- ISM 350 — 370 qt spiral; ~600+ lb bread dough per cycle. Plant-scale, frozen-dough, supermarket commissaries.
Twin-tool planetary for wholesale plants
The twin-tool configuration (suffix -DC) adds a second mixing tool plus a continuous bowl scraper to the standard planetary architecture. Two tools moving through the bowl plus a fixed scraper means the batch finishes 25–40% faster than the same-capacity single-tool model — and there is no manual scrape-down between cycles. For wholesale plants running 8–12 cycles per shift, that is the difference between a one-operator station and a two-operator station.
The flagship IBT 300-DC CR pairs the twin-tool drive with recipe automation on a 12-inch touchscreen — store, recall and lock entire mixing programs, including jacket temperature setpoints and CIP wash sequences. For allergen-controlled plants, this is the interface that takes a daily-changeover risk out of the operator's hands.
Sanitation, washdown and CIP
Wholesale plants in the US and Latin America face FDA, USDA, SQF, BRC and local equivalent audits where mixer sanitation is a recurring finding. The -CR full-stainless body addresses this directly: AISI 304 throughout the visible surface, no painted panels, no carbon-steel substructure underneath. Bowl, tools, lid and scraper are removable for manual deep clean. The IBT 300-DC CR adds factory CIP (Clean-In-Place) with spray-nozzle headers, drain provisions and electrical interlocks — the level of automation required by high-throughput cream, pastry, chocolate and allergen-segregated plants.
How wholesale buyers compare specifications
For wholesale buyers, the spec-sheet questions that matter most: motor power and gear ratio (continuous-duty capability), bowl material and welding standard (AISI 304 with TIG welds throughout, no surface cracks), control IP rating (washdown compatibility), bearing type (sealed industrial bearings, not retail-grade), and spares availability. We publish complete US-spec datasheets — capacity, power, voltage, dimensions, weights, footprint, ceiling clearance, electrical load — on every IBT and ISM model. Request a model-specific datasheet through the contact form or email sales@dirmakusa.com and we send by reply within one business day.

Frequently asked questions
What is the largest mixer in the Dirmak wholesale tier?
On the planetary side, the IBT 300-DC CR at 317 quarts (400 lb cake / 200 lb bread per cycle). On the spiral side, the ISM 350 at 370 quarts (600+ lb bread dough per cycle). Both are built for plant-scale wholesale operations.
Do wholesale models include CIP self-cleaning?
The IBT 300-DC CR includes factory CIP with spray-nozzle headers and drain provisions as a configurable option. Other wholesale-tier models are washdown-compatible (full-stainless CR variant) but use manual cleaning rather than automated CIP.
Are the wholesale models USDA / SQF / BRC compatible?
The CR (full-stainless) build is designed for FDA, USDA and audit-standard sanitation programs including SQF, BRC and similar. All food-contact surfaces are AISI 304 with TIG welds; the body is paint-free stainless on the CR variant.
What is the lead time for plant-scale orders?
Standard configurations of IBT 200, IBT 300-DC CR, ISM 200, ISM 250 and ISM 350 ship from our İzmir factory in 6–10 weeks after order. Plant-specific configurations (custom voltage, special CIP integration) are quoted with their own production timeline.
Do you support remote commissioning for wholesale installations?
Yes. Our sales engineers commission the IBT 300-DC CR and the plant-scale ISM models remotely by video call with the installation crew. On-site commissioning is also available by arrangement.
