Industrial Planetary Mixers — 85 to 317 qt

Industrial planetary mixers from 85 to 317 quarts for cake batter, cream, pastry, mixed loads and soft dough. Twin-tool flagship with 12" touchscreen, jacketed bowl and CIP. Manufacturer-direct from Dirmak's İzmir factory to the Americas.

What is an industrial planetary mixer?

An industrial planetary mixer mixes, whips and kneads with a tool — whisk, paddle or dough hook — that spins on its own axis while orbiting a fixed bowl. That dual rotation, the "planetary" motion, drives the tool through every part of the batch and leaves no dead spots, which is why one machine can aerate egg whites, emulsify buttercream and develop soft dough. Industrial models scale that action to 85–317 qt (80–300 L) bowls with the drive torque, AISI 304 food-contact construction and continuous-duty motor a production bakery or food plant needs — well beyond a benchtop or restaurant-counter unit.

Dirmak's IBT industrial planetary mixer series spans that full range, from the 85 qt IBT 80 to the 317 qt twin-tool IBT 300-DC CR. If you are choosing between technologies, the spiral vs planetary guide compares planetary mixing against spiral kneading for your dough and throughput.

Versatility is the point

A planetary mixer is the workhorse of any bakery or pâtisserie that produces more than one product family. The orbiting tool — whisk, paddle, hook or scraper — swaps in seconds, so the same machine that whipped génoise at 8am beats buttercream at 10am and runs brioche dough before close.

Dirmak's IBT series covers 85 to 317 quarts. Every model is built on the same architecture: oil-less belt-driven planetary drive, AISI 304 bowl and tools, full attachment set (whisk + paddle + hook + scraper), stainless wire safety guard, IP54 controls / IP32 machine, asynchronous high-torque motor and 30-minute timer. Floor models 42 qt and up; powered bowl lift on -VEL.

Suffix translation: -E button control · -VE variable speed · -VEL variable speed + powered bowl lift · -DC twin tool + scraper · -CR full AISI 304 body. The flagship IBT 300-DC CR adds a 12" color touchscreen with recipe automation, a jacketed bowl rated 41–176 °F (5–80 °C), and built-in CIP self-cleaning.

Where each model fits

  • Under 100 lb cake batter per cycle → IBT 80 or 100. Single-shift bakeries and pâtisseries.
  • 100–200 lb per cycle → IBT 120 to 150-DC CR. Mid-size production with mixed daily menus.
  • 200–250 lb per cycle → IBT 200. Two-shift wholesale, high-volume pastry.
  • 250+ lb per cycle, allergen changeovers, recipe automation → IBT 300-DC CR. Plant-scale flagship.

See capacity guide for worked sizing examples.

The flagship IBT 300-DC CR

Our 317-quart twin-tool flagship is the reference machine for plant-scale plants where homogeneity and changeover speed drive the line. Key features:

  • Twin mixing tools plus continuous bowl scraper — no manual scrape-down, batches finish 25–40% faster than equivalent single-tool capacity. See twin-tool guide.
  • 12" color touchscreen with recipe automation — store, recall and lock entire mixing programs.
  • Jacketed AISI 304 bowl, 41–176 °F (5–80 °C) — heat or chill in place for tempered chocolate, laminated dough, controlled-temperature ferments.
  • Sealed cover and gasket rated 0.2 bar — light-pressure mixing, no splash, foreign-matter exclusion.
  • Built-in CIP (Clean-In-Place) self-cleaning loop. See CIP guide.
  • Heavy plant-duty drive (~20+1 HP). 208–240 V / 3-phase / 60 Hz (480 V on request).

Frequently asked questions

What sizes of planetary mixer does Dirmak make?

The IBT series covers 85 to 317 quarts (80 to 300 L) — IBT 80, 100, 120, 140, 150-DC CR, 200 and 300-DC CR. Cake-dough capacity runs from 100 to 400 lb per cycle.

What voltage are Dirmak planetary mixers built for in the US?

Standard US/Latin America build is 208–240 V / 3-phase / 60 Hz on every high-capacity IBT. 480 V is available on request for plant installs. Smaller countertop units run 100–120 V / 1-phase.

What is the difference between -VEL and -DC?

-VEL adds variable speed and a powered bowl lift to a standard planetary. -DC adds twin mixing tools plus a fixed bowl scraper — for plants that need maximum homogeneity in minimum time.

Is the 12" touchscreen standard on the flagship?

Yes, on the IBT 300-DC CR. It is the interface for recipe automation, jacket temperature control and the CIP wash program. Smaller IBT models use either button control or a 7" touchscreen.

Can the flagship handle bread dough as well as cake batter?

Yes — with the dough hook attachment. The flagship's heavy drive comfortably handles 200 lb bread dough per cycle, but for bakeries whose main product is bread we recommend pairing it with an ISM spiral mixer.

Are Dirmak planetary mixers certified?

Yes — CE, UKCA and EAC, with UL certification pending. AISI 304 food-contact construction throughout.
